2011 in Review

I think it is pretty cool to look back and see what the heck happened over the last year, especially when I feel like I was JUST looking back at 2010.  Seems like 2012 has always been a year that was WAY far in the future, but here it is, just around the bend!
Started my first full year of menu planning!  **First New Year's Resolution I ever kept!**
Started sticking to a budget to save money to replace Ryan's car & pay off school loans
Bought our first piece of furniture (all the rest we have is inherited/gifts) -- a new couch!
Got snowed in! You know it's bad when even the federal government cancels work!

Hosted our 1st Supper Club...  I made MEXICAN food (I know you're shocked!)  It was the first time I pulled out all my fancy china & crystal that we got for our wedding... all went well until the dog put his face in the sourcream :)
Celebrated Ryan's 27th Birthday
Had a long weekend at the beach & a weekend in Spartanburg for Josh & Jennifer's wedding

Helped host a wedding shower for Ryan's best bud and his fiance
I met THE PIONEER WOMAN with my sister at Ree's book signing in Georgia

Did some big projects for our backyard - new addition to deck, planted shrubs, painted the shed
Celebrated my great aunt's 90th Birthday!

  Decided to sign up with Team-in-Training for my first half-marathon
FINALLY sold the Rodeo & bought a Truck for Ryan
Had our second major mishap of homeownership & had to replace our A/C unit
Travelled to Chicago, IL and Holland, MI to celebrate the wedding of Christian & Stephanie

Celebrated with our friend's Gray & Leigh when they brought home their son from Ethiopia!
Finally got to make the Blackberry-to-iPhone switch
Watched excitedly as our GAMECOCKS rose to the top of the pack again and brought home their SECOND NCAA Baseball National Championship!

Celebrated our nephew Cooper's 1st birthday
Spent a week of vacation at the BEACH!
My friend Jenny moved back to town!

The summer of broken appliances continued with a washing machine that tried to flood our house!  Luckily we found a great deal on a new washer/dryer set at Home Depot -- our 3rd major purchase for our house.

Travelled to Charlotte to kick off the USC Football Season!
Suffered from tendonitis and had to break from training for my half marathon :(

Spent one awesome & relaxing weekend in the mountains with my college girlfriends
Resumed training and kicked it into high gear for about 6 weeks before my race.

Ate TONS of food at Thanksgiving.
Decorated for Christmas... except, never got around to putting ornaments on the tree.

Celebrated the holidays by eating with pretty much everyone we knew.  And eating lots of food.  Our celebrations lasted ALL month.  
Celebrated our 2nd Anniversary with dinner at Mr. Friendly's & decided we need to go on more fancy dinner dates
Vacationed to the beach, relaxed & got all our Christmas shopping done
Spent Christmas with our families
Celebrated my 27th Birthday
Prepared to bring in the NEW YEAR!

Tons more things happened throughout the course of 2011, but I couldn't possibly remember them all. We are truly blessed and excited to see what 2012 is going to bring!  Happy New Year!

Twenty Seven

On my 27th birthday, I thought I'd share 27 things you might not know about me... or you might know them already :)  In no particular order...
  • It's no secret, I'm a diet coke addict.  And I don't plan to quit!
  • I wake up early, and sort of wish my husband was a morning person, but he's not. 
  • I love a plan, a to-do list, calendars... anything organized (Read: Type A) 
  • I let my dog sleep in the bed. I thought I never would.  He usually doesn't stay all night, but most nights he is at my feet when I fall asleep. 
    •  I'm a blog stalker.  I love to get a glimpse into the lives of others through their writing on the internet
  • When I'm anxious or upset, my face and neck turn bright red.  You won't have to worry about whether you've upset me, you'll know! 
  • I love to listen to books on tape.  This started when my husband and I went on roadtrips together in college, and now I listen to books on tape nearly all the time.  I have been known to  sit in the driveway listening to a book when I've gotten to a juicy part!
  • My favorite food is mexican.  Pretty much anything that includes salsa, sour cream, and cheese is right up my alley.  
  • My second favorite food is Breakfast... undoubtedly, if I had to pick one food to eat the rest of my life, it would be breakfast (with a side of salsa). 
  • I'm the only brunette child in my family, and they once told me it was because I was switched at birth.  
  • I have more shoes than any human should possibly own. And, the shoe department is the first place I visit in any store, because I WANT MORE! 
  • My love language is Acts of Service.  This might have something to do with the fact that I really don't like to do household chores.  I enjoy gifts, but I'd love it just as much if someone came and folded all my laundry, or dusted/vacuumed my house so I didn't have to! 
  • If it was acceptable to serve chips & dip as an entree, I'd do it 
  • I consume large amounts of orange juice daily.  When I came home from college, my mom rationed it out.  It's a must-have in my fridge.
  • I hate secrets.  When someone keeps one from me, I want to figure it out ASAP.  
  • Although I spend my days making sure other people take their medicines, and take the right ones, I myself hate to take them.  This makes me just a little more sympathetic to those who I'm constantly harping on to take theirs correctly -- even my own family! 
  • I tell people that getting old must be contagious -- after all, I work with the elderly, and I always want to eat my lunch at 1130 and dinner at 530 -- however, the truth is, maybe I'm just already old at heart! 
  • Along the same lines of being old, I also love to get to bed early.  In fact, it isn't uncommon for me to jump in bed by 8:30 or occasionally, fall asleep on the couch even earlier than that! 
  • I love to roast marshmallows after we've grilled on our charcoal grill
  • I ran my first half-marathon earlier this year... I decided that day that I would love to run more half-marathons, but never want to run a full marathon.  The place in the road where the marathoners split off from us to run 12 more miles was a very scary place! 
  • I love my DVR.  Since I usually fall asleep before my favorite shows even come on, I usually end up watching them either the next morning or night.... this is alright by me because there's NO COMMERCIALS!  The two exceptions to this rule are The Bachelor and The Biggest Loser... Somehow I manage to stay up late to watch these  
  • I keep a bunch of stuff in my car.  I could probably live in there for a few days if I had to 
  • I'm the only person I know that doesn't love the Kindle.  I begged for one for Christmas last year and found out that I actually can't stand the thought of purchasing books when I can go to the library and get the real thing for free. 
  • I love to listen to music in the shower.  Luckily I'm generally alone in the house cause when there's music, chances are I'm also singing! 
  • I'd rather have flowers to plant in a pot or in the ground than fresh cut flowers... I love to plant flowers and work in the yard
  •  I love Christmas decorations & Christmas music, and I usually start decorating in mid-November to be sure we have a full month to enjoy them.  This year I never got around to putting the ornaments on our tree, but I enjoyed it with just the lights! 
  • A garbage truck once blew up in front of my house.  Not a joke.

love these...

Well, i'm out on my "Christmas Break", and of course that means I'm trying to finish up my Christmas shopping (if you'll notice, a few short days ago, we had only purchased 2 gifts!  2!).  We are a little further on our way to being finished now, but still have a few things to grab.  Today I was shopping in HomeGoods and spotted these beauties....

 So, I started dreaming a little more about my front bedroom re-do... I'm looking forward to hopefully giving it a little facelift, perhaps in the spring!  The room has an antique oak bed, dresser, and bedside table.... I was thinking I might like the following for bedding in either light blue or yellow:

Who knows, but I'm loving these lamps.. so maybe they will inspire me to get started on the room!  I'd love to color match the lighter blue in the lampshade for the room paint, so that's making me lean toward white bedding with yellow accents.  (I'd paint the room yellow, but this room is already WAY bright with the morning sun -- my old roommates can attest to this fact -- and yellow would be a little much with the morning sun.)

Now... back to the task at hand... finishing the Christmas shopping!

8 Days Til Christmas....

Wow, amazingly enough, there are only 8 days til Christmas.  How many gifts have we purchased?


Luckily, we are on off of work for a few days (me for a WHOLE week!), but we certainly have our work cut out for us!  We have parents, grandparents, siblings, and a nephew to shop for, not to mention each other!

Ryan's wish list was short this year, he wants a new pair of sunglasses:

Since we celebrate our anniversary, Christmas and my birthday in December, which can make buying gifts for me difficult....and for the first time in a while, I actually had lots of various things on my list, for the sake of space I won't put pics of all of it! For my kitchen..... a cast iron skillet, a metal colander, a rolling pin and a few more of my everyday china cereal bowls.  For my closet.... exercise gear for cool weather running, new running shoes, a super lightweight rain jacket, dresses to wear with tights, Kim Rogers Candice Wedges,  new jeans (thanks Mom! She already got these!), and a new purse!  For the house... bedding for our front bedroom, furniture for our front or back decks, a new back door (and labor! hint hint, brother of mine, I'll buy the door if you gift the labor!).   In the last few days, I added one thing to my list, a new coat... so I've been looking around for options, here's what I've found:

Sleigh Bell Trot

 
Last night Ryan & I ran with some friends in the annual Sleigh Bell Trot at Saluda Shoals Park.  It's a fun little race that runs through the park, and they have all the Christmas light displays lit up.  However, it was pretty warm outside so it didn't feel too Christmas-y! 
 
It was an eye opener for me, as my first "event" following my half-marathon in Savannah.  Going into last night, I thought, it's only 3.1 miles, I ran 13.1 miles just a few weeks ago, this is no big deal!  However, I took off at a quicker pace than my half-marathon pace, and I felt it the WHOLE way.  I guess the moral of the story is, don't think that because you finished a big long endurance event that the short quick race is going to be an easy one. 
 
I felt great when I crossed the finish line, completing the race at less than an 11min/mile pace (that's a whole min/mile faster than my half-marathon pace).  Since I was more focused on running than the lights during the race, we walked back to our car and enjoyed the lights a little before we left.  With Thanksgiving tomorrow, and seeing all the lights last night, I'm ready to get our house all decked out for the holidays!

Weekend ahead...

So incredibly thankful it is Friday!  We have some good things planned for the weekend and I pretty much just can't wait to get it started....
 
First off, after work today, Jennifer & I are going to run at the river.  Hopefully it won't be too chilly since all of a sudden we had a giant cold front roll in.  It is only my second time running since my big race two weeks ago.  It has been a nice break to only run a few times here and there rather than 4x a week!  Don't worry though, I've been hitting the gym, just not SO much running.
 
After our run I'll probably get started on making up some good tailgate food for tomorrow.  I'm making hashbrown casserole again for the morning, this time with BACON!  (Let's face it, everything tastes just a little better when it has bacon in it.)  For after the game, I'm throwing together the EASIEST RECIPE EVER that Lindsey made for our supper club appetizer last weekend.  Check back for a recipe real soon.
 
South Carolina plays The Citadel, so it should be a low-stress game, leaving us to enjoy our beautiful day at the stadium.  It is also military appreciation day which is always special, and a little birdy told me there is going to be a fly-over, which I always find fascinating. 
 
Sunday, we're having a pot luck lunch at church, I'm making crockpot macaroni & cheese.... then I'm hoping to convince Ryan to head out a week early and go snag a Christmas tree!  It should be really interesting this year with Beaufort and the tree.  He has taken a new liking to sticks/twigs/branches of any kind, so we need to get started getting him used to it before we put any ornaments/lights on it.  Last year, he was small enough that we were able to just block it off, but this year we're going to really have to perfect his "LEAVE IT" skills.   
 
Whether or not we get the tree, I'm already listening to Christmas tunes, and I can't wait to celebrate the holidays this year :)

My T-E-A-M in Training Experience



This is a huge long post about my recent training & completion of my first half-marathon, mainly to help me remember when I'm looking back in time someday... it is also posted over on my TNT website if you care to read more about the WHOLE experience from the beginning, but I'm not sure how long that site will exist, so I'm posting it here too!

Six months ago I embarked on a journey with 2 friends and a goal -- finishing theSavannah Rock'N'Roll Half-Marathon. When we decided to train for our very first half, I knew I would need something huge to motivate me. After all, just a few days before, I had simply walked the 3-mile course of a race for which I signed up to RUN the 5-mile course. Jennifer, Amy & I passed the TNT tent and tossed around the idea of training for our first half-marathon. I knew all about Team-in-Training because my sister had participated with the Columbia team just 2 years ago to complete her first half-marathon in Myrtle Beach. At first, I was overwhelmed by the idea of raising the money, but at that point, I couldn't even imagine the outflowing of support I would receive in the coming months. I was also overwhelmed by the task of running such a long race. Many times I had spoken the words, "who would want to run for 2+ hours straight?!?". I think the things I learned over the last six months relating to both fundraising and running can definitely be summed up in the TNT motto "TEAM - TRAIN, ENDURE, ACHIEVE, MATTER". Leading up to the race, I wore a purple bracelet with the TEAM motto to remind me what it was all about.

TRAIN - Each and every week, our coaches provided us with the opportunity to run as a group 3 times. We had two week-night "short" runs and a EARLY Saturday morning "long" run. Of course, the main goal of these runs were to train our bodies for our eventual goal. We gradually built up our mileage, all the way from 1 mile to 12 miles. As we ran, we also trained our minds to complete our race. By the time our 12-mile training run came around, I no longer doubted that I would be able to complete the 13.1 miles on race day. I knew I was trained. I had learned many important lessons.... the importance of breakfast, what to drink before/during/after a run, how early to wake up, how much to stretch, what clothes to wear, what supplies I needed with me at all times, what snacks to eat along the way, my favorite flavor of gatorade, where to find porta - potties, what to do when you couldn't find one, and how to recognize signs of trouble in myself and fellow runners. Training as a group was a great experience for me, and a successful one. Without my teammates, I wouldn't have been able to complete the training on my own.
6 months ago, we walked 3 miles... here we are after running 13.1!


ENDURE - Our first training started with these instructions: "Run this direction for 15 minutes, then run back...go as slow as you need to go to keep running the whole way." Looking back on that day, those 30 minutes seemed like an eternity. However, they were just a tiny FRACTION of the time we would spend on the road in the coming months. To be exact, they were less than 1/5 of my total race-day run. We slowly built up the endurance to run longer amounts of time and distances. I remember clearly the first day I ran the entire 5-miles of the Riverfront trail without worrying about whether I would make it the whole way. It was such a mental hurdle to overcome. Here are a few of the simple things I've learned about endurance: (1)long distances are easier to run early in the day, specifically, first thing. (2)attempting endurance in the middle of a heat advisory = ill-advised. (3)good company is better than any itunes playlist (4)an itunes playlist can go a long way to encourage you if good company is unavailable (5)running long distances leads you to share things you wouldn't ordinarily share with strangers (6)your brain doesn't work so well at the end of long distance running...just try doing some easy math and test yourself :) Most of all, I learned that the biggest obstacle to endurance is your MIND, not your body. I have short legs and don't run very fast, but my determined spirit took me a long way in my training. Each time I ran, I knew the total distance in my head, and didn't allow myself to quit until I had it completed. My teammates and I endured through injuries, SC's famously hot weather, rain, storms, early mornings, and many other obstacles along the way, but it was definitely well worth it when we finally crossed that finish line.

ACHIEVE - Each week in our training, we set and achieved new goals. Before joining TNT, I had never run more than 5 miles in a single stretch. Leading up to joining the team, the longest I had run in recent history was 4 miles. We began building up our mileage from 1 mile all the way to 12 miles. Each time we increased our goal, I achieved a new personal record for distance. The sense of accomplishment each week was just enough to spur me on to the next goal and the next. We also set goals for fundraising, and it seemed like each time I set a new goal, my supporters jumped on board and helped me to surpass the goal within only a matter of hours-to-days. With the help of all my generous supporters, I raised $4107.90 for LLS. At our inspiration dinner before the race, it was a great feeling to hear that the South Carolina team in Savannah had raised over $235,000, and all the TNT'ers in Savannah had raised over $1.4 Million! I'd say we achieved our fundraising goal, and then some. Ultimately, our goal is to find cures for cancer, and that $1.4 million ought to go a long way. One day, when someone finds that cure, I'll know that I had a part in that achievement.

MATTER - On race day, I had a ribbon pinned to my jersey for all of my supporters and a ribbon for each of our honored heroes who battled cancer. I was thrilled to share with fellow runners on the course what each ribbon signified. By far, my favorite moment during the race was being able to tell a runner whose mother had died of Lymphoma that the reason I was running was to help find a cure.During our training and during my race, I couldn't help but strive to honor my heroes through my efforts. Even when hardships showed up along the way, I knew it was nothing compared to the fight against cancer. TNT has another slogan "If you think training is tough, try chemo." Each time the going got tough, I could remember those people who were battling cancer, and I knew that I had to keep fighting. My efforts to raise money and awareness for LLS definitely MATTER to those who are in the fight for their lives. On race day, when I left my hotel room, there was a sign on my door with the pictures of all my honored heroes. It read "Good Luck Leslie! Never forget who you're fighting for. Your honored heroes are with you every step of the way." That was all the inspiration I needed to run the race of my life to honor each and every one of them.

Being a part of TNT was an awesome experience, and definitely taught me many lessons that I'll carry with me in the future, both for running and for life. My team was comprised of a few close friends, strangers who became friends, and some pros dedicated to teaching us what being part of this team was all about. I am ever grateful to the heroes who inspired me, the donors, family & friends who supported me, and the teammates that raced for a cure with me. I could never have done it without you.

Menu Plan Monday - Week 44

We made it!  We ate in all our dinners in October at home except for a few freebies we scored with family, and one dinner at Chick-Fil-A after a softball game.  We plan to try and stay on this kick, except plug back in the weekly date-night-out.  We usually eat at places that are 1) relatively cheap (ie mexican) or 2) leave us with leftovers, so we get more than one meal... so we can justify that once a week treat.  Plus, my creativity in meal planning can only take so much!  We're gonna celebrate our month long eating in by eating out on Halloween!

Well, I meant to take a picture, but my casserole was DEVOURED this morning in Sunday School.  I always debate what to take when it is our turn to take breakfast, because it is always so hit-or-miss what people will eat, and what you'll end up with a ton of leftovers to take home with you.  So far in our history, we've taken home a bag full of bagels and a dozen krispy kremes (not that I'm complaining), but I wanted to try something a little different today, so I made my friend Lorraine's Sausage & Hashbrown Casserole recipe. We've made this for breakfast tailgates and also "breakfast for dinner" and it turns out wonderfully, every time!

Here's what you need:
1 bag southern style frozen hashbrowns
2 cups cheddar cheese
1-2 pounds (depending on how much you like) breakfast sausage
1 can cream of mushroom soup
1 cup sourcream
1/4 cup onion chopped

Directions:
Brown sausage and onion together in a skillet, drain off extra grease.  Mix all ingredients except 1 cup of cheese and spread in greased casserole pan.  Top with remaining cup of cheese. Cook at 350 degrees for 40-45 minutes or until browned to your liking.

If we have another early football game this year, this is definitely what I'll be making for the tailgate!

Oreo & Peanut Butter (or Nutella) Stuffed Brownies

I have a gazillion recipe blogs loaded into my google reader.... plus, I have my sweet friend Leigh who emails me the top 10 recipes she's found throughout the week every Friday.  Seriously, there are so many great cooks out there posting their recipes, it's difficult to decide which ones to make first!  When I first read this recipe on Picky Palate, I immediately emailed it to my co-worker who loves all things peanut butter and chocolate.  Since I have a peanut allergy, I was pretty disheartened because this would add another item to the list of treats that I just couldn't enjoy! 

When I was planning dessert for our tailgate one weekend this fall, I got to thinking, perhaps there's a way for me to have these afterall!  I whipped up a double-batch, making half with peanut butter and half with Nutella.  (Pink cupcake liners for Peanut Butter, so I don't accidentally bite into the wrong one.)



This is one of the EASIEST recipes I've made lately, too. All you need is a box brownie mix, Oreos, and your choice Peanut Butter, Nutella, or both.  Line your muffin tin with cupcake liners, stack two oreos together with a dab of peanut butter in the middle and on top, then pour on the brownie mix!  Bake at 350 for about 20 minutes or until brownies are done, let cool & serve!  We ate these at tailgate, but if I were eating them at home, I'd pour up a LARGE glass of milk to go with them!

a few things I know today...

1. crockpot shredded beef tacos are one of the best recipes i've ever found on the internet.  seriously. inhaled them Sunday night and DEVOURED my lunch plate today.
 
2. i may not be able to walk tomorrow.  since i've started running, all my squats/lunges/leg strengthening has gone out the window.  natalie brought that back with a bang at pilates torture tuesday today.
 
3. crockpot shredded beef tacos were my reward for resisting the temptation of skipping pilates and eating out with friends from work
 
4. on most days, especially today, diet coke saves me from my post-lunch need for a nap :)

Back on Track - Menu Plan Week 40

We're back on track with our menu plan this week, and actually for the month of October, giving ourselves a little challenge.  In order to both save money and create some better eating habits, we're committing to not eating out for dinner in the month.  (Eating out = restaurants and to-go restaurant food that we have to buy in addition to groceries.  Free eating out is alright in our book, so we'll still do that if the opportunity comes our way.)   We hope that eating at home will also help us to pack our leftovers more for lunch at work, therefore equal less eating out for lunch, too!  I'll keep you posted on how it goes.

Menu Plan Monday - Week 39

It's hard to believe we're about 2/3 through this year.  We've had some crazy heavy meals in the last few weeks... sometimes two in one day, so both Ryan and I wanted to keep it light this week.  We're eating salads, sandwiches, soup, and anything we can whip up from the simple ingredients we have on hand in the pantry and lots of fresh produce.  Sometimes the best plan after eating lots of rich foods is to go back to simplicity, so that's what we're doing this week.  No plan, just keeping it simple.

We have another busy weekend ahead, so the junk food and other yummy stuff is sure to be back soon!

First day of Fall 2011


Today is officially the beginning of Fall, so I'd like to share with you a few things I LOVE about this season.... and they are in no particular order because these are the random thoughts of my brain :)
 
1. Soup - so if I'm being honest, I eat soup all times of year, but the best time to eat it is in the fall! Usually I've had a long break from soup (especially the homemade kind) by the time fall rolls around.  To me, there is just nothing better than a warm bowl of soup on the first few crisp days of fall.  A few of my favorites are.... Easy Crockpot Potato Soup,  Taco or Enchilada Soup,  Cheesy Chicken Corn Chowder, and of course some Chili sometimes!
 

2. Football Tailgates - clearly, if you know me, you know I grew up in a family that LOVES football. (Clemson football, to be exact).  However, as a proud graduate of THE University of South Carolina, my blood runs GARNET!  My favorite types of foods are all present at tailgates --- dips, chicken, biscuits, grilled stuff, and of course, DIET COKE!  And the fun times spent with family and friends enjoying food, games, and football talk just can't be beat!  Also, on a random note.... ever wonder what would be a great wedding present?  Tailgate chairs!  Our go-to-gift is a matching set of chairs for the bride & groom.  We usually try and get team-themed chairs if possible & we've had several friends tell us the chairs were their
 "favorite" or "most-used" gift.

 
3. Cool, but not COLD weather - ok, so I HATE cold weather, but I LOVE when it starts to get cool.  If I can sport a sweater without wearing a jacket, or longsleeves with flip-flops, I'm totally down with that.   There's also nothing like riding with the windows down in the car with the seat heater warming up your bottom!
 
4. Dark mornings - I love me some sleep, so hitting that snooze button becomes so much easier when it is still dark in the mornings!  Usually though, if I let it last too long, I have a furry friend all up in my business & licking my face so he can get his breakfast.  See exhibit A: 

 
5. Trips to see friends & visitors - We've already been to Charlotte this fall for Carolina's first game against ECU.   Usually we have lots of friends coming in to town for football games & there is already a girls trip in the works with my college friends in the fall!  Of all our college friends, we are some of the few who still live here in town.  We LOVE hosting anyone coming down (so plan your trip soon), but it is also a great time of year to make our own trips to see all those fun people who've left us behind!
 
6. Preparing for holidays - I'm already thinking up ideas for Christmas gifts, decorating for Halloween, Thanksgiving & Christmas, and just what we'll do for our anniversary this year.  The holiday months always seem to fly by with so much going on, so I'm hoping this year we'll take the time to just enjoy each moment and spend time with family & friends.   Probably as soon as the calendar flips over to October, I'll re-load the Christmas music onto my iPod.  Let's face it, I think we could add about 60 more days to the month of December, and still not have enough time to enjoy all the Christmas tunes.

Fall Saturday

Whoa, it's been a while since I posted anything but menu plans.  Waking up early today has given me a chance to really enjoy our first real FALL Saturday.

For a change, it is actually surprisingly cool for our first home football game scheduled for tonight at Williams Bryce Stadium.  I'm a little sad that I'm not out running in this fabulous weather with my TNT team, but you can read more about that here.  My leg is on the mend, so I'm hoping to be out on the road again soon!

So given that we have a cool fall day, I'm planning to enjoy it to the fullest.  We'll probably go grab some breakfast.... I'm thinking... hangover hashbrowns???

Then hit up the store for some yummy tailgating food..... perhaps buffalo chicken dip.....  and maybe some sweet black bean & corn salsa...yummm.

Maybe get a few things done around the house, then head out to enjoy some tailgating before the GAMEOCKS take on NAVY!

Menu Plan Monday - Week 35!

This is the last week of the month, traditionally my BUSIEST week of the month at work, therefore I'm looking for the easiest possible meals to throw on the table as quickly as possible.  In addition to that, I've got some volunteer responsibilities, getting a haircut, giving blood, preparing for the first Carolina football game and of course RUNNING to train for the Savannah half-marathon.  All that being said, I barely have time to think this week, and that's when DREAM DINNERS come to the rescue!  I'm not sure I could put together a yummier menu, though!

Parmesan Chicken Recipe

Tonight I made one of our favorite dinners.  I got the original recipe from my friend Megan a few years ago after she published it in the church cookbook.  She had us over and made it for dinner one night, and I fell in love.  I might not have all the details exactly the same as she makes it, but thought I'd share my rendition.

It is a little bit labor intensive, so I don't make it often, but I had some free time today and hadn't made it in a while.  After eating it, I remembered it is TOTALLY worth all the work.

Parmesan Chicken Recipe:

You'll need:
Chicken (you can use chicken breasts cut in half, I thawed the frozen chicken breast tenderloins)
Shredded Parmesan (I use the bagged grocery store version)
Eggs
Salt&Pepper
Grape Tomatoes
Spinach
Goat Cheese (optional - I left it out this time because we had pasta salad with feta)
Olive oil

Instructions:
Beat your eggs in a small bowl with salt & pepper, dip the chicken in the eggs, then dip it in parmesan cheese, covering both sides.

Heat small amount of olive oil in skillet, and cook chicken (without flipping) until more than half-way done.

When you flip the chicken, the cooked side should be a pretty golden/brown.  Continue cooking until done all the way through.  Then, top with chopped grape tomatoes, spinach & goat cheese (if using).  Allow spinach to wilt, then you're ready to serve!



We had one of our go-to side dishes - homemade pasta salad (noodles, zesty italian, feta, tomatoes), but this would also be great with a big salad or some other green veggie.

I'm a little slow posting today because I just got back from my first ever private plane flight to orlando.... here's a little pic of our plane... GAMECOCK ONE.


Amazingly enough, the flight was incredibly smooth for such a tiny plane.  PLUS, flying out of a private airport, arriving just 15 minutes before takeoff, is totally the way to fly!  No pesky airport security!  If you ever have a chance to fly private (and trust me, this trip was FREE, that's the only way I could have done it), go for it!  It probably didn't hurt that our pilot used to fly for the VP of the United States!

a breeze

I normally love summer.  Even the heat that comes along with a South Carolina summer.  BUT, yesterday was the 6th day in a row of sweltering heat, so I spent most of my Saturday inside.  (Well, if you don't count the 7.43 mile run completed before 8am).    I originally had all these plans of spending the afternoon out shopping, but the heat this week completely wiped me out.

This guy is wiped, too.


We actually did venture out to lunch and to the new Mast General Store in town, and scored two $10 off coupons which I used to buy some Columbia tank tops for running.  After our lunch, however, I alternated between my couch and my bed, drinking up lots of ice cold water.

This morning, when I woke up, it was already hot, and the dog was going a little stir-crazy from being inside most of the day yesterday.  I decided to take him out back and toss the tennis ball around and when I opened the door, I felt the most glorious BREEZE!  The actual movement of air!    Just when I had started to lose all hope of it ever cooling off again!

I'm looking forward to a slightly more productive day today.  It's the little things, like a breeze, that can really turn your day around.  Any good ideas for hot weather activities?

Menu Plan Monday - Week #27

No plan this week... we're at the beach :) That means the fridge is stocked with lots of good stuff to cook and we decide in the mornings what to make that night.  We hit the local store about once-a-day to pick up the necessities.  We spend HOURS on the beach everyday and maybe once in a while hit the outlets (if we're too sunburned or weather is bad).  Mostly, lots of R&R is on order. 

For the 4th, we're celebrating with BBQ Ribs and Peach Cobbler.  YUM.

Menu Plan Monday - Menu Planning Week #26

Well, we made it!  Halfway through 2011 and we're still menu planning!  This week we are getting ready for next week's vacation, so we're trying to save some money and clean out the fridge.  Also, this is the first time I've ordered "Dream Dinners" (DD), which are pre-made frozen meals that you pick up at Piggly Wiggly and all you have to do is throw them in the pan or the oven, no prep required.  I'm trying them out because they give 30% back to my fundraising for TNT, plus, you it is a pretty good deal to get an entire meal that feeds 3 for $10.  (And, there are only 2 of us).  I only ordered a few this time because I wanted to check them out, but if they are a success, then I might be trying even more next month!

Fruit Trifle Recipe

My summer go-to dessert is the fruit trifle.  Usually, I make it with just strawberries, but for our luncheon at work this week, I decided to change it up a bit and add blueberries, too!  Very "American" themed, huh?  This is the 3rd or 4th time I've whipped up this recipe in the last few months and lots of people have asked me to write it down so they could make it, so here it is!

"USA" Theme Trifle



Ingredients:
Vanilla Jello Instant Pudding Mix + Milk to prepare
Cool Whip
Angel Food Cake (torn into lots of pieces)
Fresh Fruit

Directions:
On the night before your event, slice up your fruit and top with sugar.  Allow to sit in fridge overnight to get good and yummy.  Go ahead and put your cool whip in the fridge to thaw, too!

When you're ready to put it all together, use a glass bowl or trifle dish (this makes for a pretty presentation, but it would definitely be just as tasty in any other dish), tear your angel food cake into lots of little pieces, then get ready to layer:

angel food cake - fruit- pudding - cool whip - angel food cake - fruit - pudding - cool whip

You always want to end with cool whip, then use a little bit of fresh fruit to decorate the top!

I've made it with both vanilla and cheese cake flavored puddings.  I think it would be GREAT with peaches, and can't wait to try that later this summer.  If you're wanting something light & cool, this is your dish!  You can change up the size by using more fruit, larger boxes of jello mix and a larger container of cool whip.

I've gotten lots of compliments on this recipe, especially on hot summer days.  Trust me, you won't ever have leftovers!

Menu Plan Monday - Menu Planning Week #25


OK, so this past week was a little bit nuts, and since I'm always late posting up our menu plans anyway, I decided to go ahead and jump on board with all the other bloggers who love the alliteration with Menu Plan Monday. 
 
This is officially week #25 of menu planning for me, so we'll be at HALF A YEAR next week.  That seems so stinking crazy.  Anyway, this weekend we went to Charlotte to greet our friends returning from Ethiopia, and while their flight was delayed, I got to share the joy of the Midwood Smokehouse with my hubby and our friends.  It was a hit.  Then, of course, yesterday we celebrated Father's day with both our dads, so it was an all-day grillfest with burgers for lunch and pork chops for dinner.
